The dates for the 2027 edition of the Salon du Chocolat will be announced soon. The event is annual and is traditionally held in late October or early November at Paris Expo Porte de Versailles, Hall 5; the 2026 edition is scheduled from October 28 to November 1. As the world's largest event dedicated to chocolate and cocoa, it brings together 240 exhibitors and 96,000 participants.

General public in the aisles, professionals behind the scenes: chocolatiers-pastry chefs, bean-to-bar artisans, cocoa bean traders, and major brands cross paths with a crowd that has come to taste. Masterclasses, a chocolate dress parade, and tastings make the show as much a theatrical exercise as a commercial rendezvous. Stand locations are prepared well in advance, as soon as the schedule is announced.

Tasting imposes its own rules: fluid circulation in front of the counter, good product presentation, and discreet restocking from a storage area integrated into the stand.
